Summer is upon us, the days are long and I don’t know about you but I never want to go home while the sun is still shining. But, getting home late and cooking a healthy meal isn’t always easy and that’s where Mindful Chef stepped in and offered to help.

 

Mindful chef is a new British company specialising in paleo meals delivered to your door. Their healthy, lean ingredients are delivered weekly (on either a Sunday or Monday) along with easy to follow recipe cards and dishes take between 20-30 minutes to make from scratch.

 

 

The box arrived with each meal’s ingredients in separate fully recyclable brown bags – making it totally hassle free. Shopping, planning and even unpacking elements removed, I could just pop them in the fridge as they were. Not only that, I was looking forward to eating nutritious balanced meals. Mindful Chef say that many of their customers use the meal kits as a plan to help improve their health and well-being. After a few weeks of meal plans, customers have reported sustained weight loss, improved sleep, clearer skin, muscle growth and increased energy levels.

 

So, with a holiday approaching, I couldn’t wait to get stuck in…

 

 

I had three very different dishes all made with organic and free-range ingredients sourced from award winning organic west country suppliers. Hazelnut pork, fresh red cherry salsa and ruby red chard, Walnut and mustard beef, orange, beetroot and watercress salad and Flattened chicken with honey and mustard carrots and greens.

 

The hazelnut pork was my favourite with an absolutely delicious salsa with a kick - I used a whole chilli, which gave it heat but the flavours were still very strong and some that I’d never have thought of putting together myself. It was easy to prepare, took just 20 minutes and was an ideal mid-week meal.

 

 

The beef was earthy in flavour from the beetroot and watercress and so filling it fed me for dinner and lunch the next day. The chicken was a simple recipe that’s hard to go wrong with and the excellent quality of the chicken breast was obvious, I don’t know that anyone wouldn’t like this dish. All three recipes were perfect for summer with the recent heatwave and all fresh, tasty and left you feeling full but not bloated.

 

 

So, my verdict? Healthy eating made hassle free and delicious - perfect for Londoners working (or enjoying) long hours and maintaining a satisfying balanced diet.

 

Three meals costs £24 and you can choose from lean, balanced or plant based recipe kits to suit your lifestyle. They currently deliver within M25.
