Parlour Kensal Spiced Roasted Bar Nuts

1kg Blanched Peanuts
15g herbes de provence
70g soft brown sugar
30g garlic cloves
60g egg white
8g cayenne pepper
15g olive oil
Blitz all the marinade together in a blender with the egg whites.
Pour over the nuts and massage the flavour in. Cover with cling film.
Marinade the nuts over night, the next day, roast at 150’ for about 40 minutes stirring every 10 minutes, until toasted and rich and moreish.
Goes very well with BEER.
