Single Pizza Recipe

200g flour (good quality 00 flour)
2g fresh yeast
2g table salt
Once the mix has come together, knead the dough for at least five minutes (this is done to expand and stretch the gluten in the flour), then cover and allow the dough to prove / rise in a warm place for at least one hour.
Once the dough has doubled in size, knock it back and roll it out to your desired shape and size.
Now you're ready for the fun part - the toppings! Firstly, you need a good tomato sauce base. To make this, you need good quality tomatoes (preferably peeled San Marzano tomatoes, if you can find them), fresh oregano or basil, a good splash of extra virgin olive oil, salt, pepper and a pinch of sugar.
Spread a thin layer of your tomato sauce over your base and then top with good quality buffalo mozzarella.
To jazz up a Margherita, you can always add some sun blushed tomatoes - delicious!
Finally, cook the pizza in a very hot oven until the cheese has melted and the dough has taken on a light brown colour.
For the best results, cook the pizza at 330 degrees, for 3-4 minutes.
