With all that’s happening in the street-food scene, the words ‘Food Pop-Up’ usually conjures an image of greasy burgers, open-air street-food markets, and American cuisine pub residencies. Cuisson's POPdown completely flips the script on modern pop-ups by marrying it with a supper-club vibe to deliver this relaxing yet elegant dining experience.
Created by luxury gastronomy experts, Cuisson, this summer-long dining experience promises to deliver fantastic high-end cuisine at extremely affordable prices. The Cuisson team have a collective CV that comprises of some of the UK’s best and well known restaurants ((The Fat Duck, Galvin at windows, Le Gavroche, The Square, Maze and Adam Simmons), and have created a menu of four courses that salutes classic French cooking with a few modern twists.
The Pop-Up is housed in the basement of Borough Barista (just off Haymarket) and can accommodate thirty-eight guests for dining. Guests are encouraged to (but not obligated) to interact with the chefs, plate the servings, and ask as many questions as they have. For those with a sweet tooth, there is also the Pop-Down Dessert bar – complete with three courses of indulgence.
FOOD AND DRINK
With an ensemble as distinguished as the Cuisson team, it’s not surprising that the quality of the food on offer is the centrepiece of the experience. The four course menu starts off with a Ratte Potato - a huge surprise as an entirely herbivorous dish isn’t something I usually go for. The chicken parfait was a superb example of bold classic tastes with hints of modern touches. The Slow Cooked Smoked Salmon was possibly the best salmon I’ve had anywhere (an opinion unanimously shared by the entire table) – extremely delicate, tender and packed with flavour. A hurricane of mini desserts make up the final course, allowing guests to pick and choose as they please. Every dish is impressively displayed and a delight to taste.
All in all Cuisson’s Pop-Down is a super evening. The food is packed with forethought and flavour, the supperclub-esque atmosphere encourages conversation and mingling, the interaction with the chefs means their passion isn’t restricted to the plate and all of this at very reasonably prices.
