Philip Juma’s takes dining with friends to a new level. His sell-out pop-up supper clubs are feasts for all the senses combining an innovative Iraqi menu with Middle Eastern musical theatrics to bring a lesser known cuisine to life. From city slicker to city chef, get to know Philip a little better as he answers a few of our questions.

 

 

 

You used to work in the City - who or what first sparked your interest in becoming a chef?

I was always on a search to find a job that I was passionate about. The finance period allowed me to be financially stable, but there was something missing. Food was always in the background and I just continued to fuel my passion for years. Then in 2012, I hosted my first Iraqi supper club and the feeling was incredible. JUMA was born…

 

What's the first thing you remember cooking?

My Nana' s coffee cake. Immense!

 

And the last?

Gressingham duck with pak choi.

 

Who would be sitting at your fantasy JUMA Kitchen table?
Phil Howard (The Square Restaurant) - an absolute inspiration.

The JUMA family - who don't live in the UK. I want show them how I've reinvented their classics.

David Attenborough - legend.

Bruce Lee

Jack Burton, Egg Chen and David Lopan from Big Trouble in Little China.

 

Which three ingredients could you completely not live without?

Maldon Rock Salt

Cardomom

Pomegranate Molasses

 

And which ingredient do you think should be banned from the kitchen?

Celery!

 

What's your guilty pleasure? Food and drink?

Drink: I love my cognac. I'm an old man at heart.

Food: Butter

 

What's your most crazy/memorable kitchen/cooking experience?

I can't share it.  What goes on in the kitchen, stays in the kitchen.  They are the most intense, yet addictive environments to work in.  Hats off to ALL chefs.

 

What're your plans for the future?

Immediate: Find a residency for 3-6 months.

Future: Open a restaurant.
