Martin Williams, Founder of M Restaurants

M Restaurants is the new super-cool venture from restaurateur, Martin Williams. The restaurant doesn't so much pack a punch but more a ruthless flurry of blows. There's a grill, a 'Raw Bar' (featuring authentic Japanse cuisine), a wine tasting wall, a destination cocktail bar, private member's room and countless private dining options. Find out a little more about the 'M' in M Restaurants as Martin Williams answers our questions. 


What inspired you to get into the restaurant business?

I love the theatre of restaurants. Terrance Conran’s restaurants inspired me when I first came to London as a student, I fell in love with the glamour, design, taste sensations and international offerings.


Who gave you your most valuable piece of advice?

My previous CEO, Zeev Godik, kindly told me that 99% of my instincts were 100% correct – so to go with them!


How do you have your steak?

It depends on the cut. Fillet and Rump- Rare, Sirloin and Ribeye - Medium Rare.


Which Chef/ restauranteur inspires you the most?

Danny Mayer, is a legend; The epitome of hospitality. He advised me to take the leap to create M and to stay in London, when I was looking at other possibilities.



What would be your last supper and who would cook it?

Ben Blackmore Wagyu Sirloin – cooked by Cameron Diaz (assuming she can grill).


What are your top three restaurants and why?

Casa Tua in Miami, Stunning hidden away venue, with beautiful food.

Geranium, Copenhagen – A taste sensation Marathon.

Then it is a tie up between Rabbit – the food is innovative, provinence and husbandry unparalleled; and Oblix, I love eating in the lounge and the live acts, whilst eating fantastic fare.



Tell us a secret ;) ?

I used to be an actor and once played a transvestite whore in the TV drama The Vice.


What's your favourite junk food/ guilty pleasure?

Shake Shack Burgers and Galaxy Minstrels


What irritates you most about the industry?

The lack of skilled labour in the market and ludicrous laws which prevent a more diverse and international work force.


If you had more time, what you would do?

Re-learn how to play the Piano and play more golf and tennis. Visit more vineyards in the world with my wife.


Who would be at your fantasy dinner party?

Angelina Jolie, Kylie Minogue, Cameron Diaz, Boris Johnson, Niall Quinn, Brandon Flowers, Richard Branson


What was your proudest moment?

Opening M to a venue full of supportive friends and family as Tinie Tempah sang to us from M BAR


What dish would win over your heart?

Toad in the Hole – the food of northern romantics.


What advice would you give to somebody wanting to set up a restaurant?

Cash Flow. Have plenty. You will be grateful to have one less thing to keep you awake at night.


What do you think London is missing?

An M Hotel


What three words most reflect the legacy you hope to create/ leave for future generations?

Hospitality, Experience, Quality


Anything else you'd like to tell the world?

Hudson is my wife and I’s chocolate labradoodle - I usually manage to name check him in interviews. He is a big fan of visiting M.
